1)What is hand brewed coffee?

Literally: hand-brewed coffee.

Hand brewed coffee was invented in the early 20th century by the German lady Melita.

At the time, the traditional European way of making coffee was cumbersome and Melitta, who loved coffee but was frustrated by it, wanted to invent a more convenient and simple way of making coffee.

Mrs Melita, who had always been a housewife, just happened to come across her son’s school workbook.

With a stroke of genius, she made the world’s first coffee filter from the ink paper in her homework book and accidentally produced a cup of coffee that tasted like nothing else!

The joys of hand-brewed coffee

The human taste buds can only taste the acidity, sweetness, bitterness, saltiness and freshness of coffee though.

But the human sense of smell is, on the contrary, much more powerful. The average person can distinguish between a dozen different smells, and with olfactory training, the best people can remember around 3000 smells.

And so the question may be asked, “Why does coffee smell good, but not taste good?” So rather than drinking coffee, drinking coffee is actually an olfactory pleasure.

The volatile aromatic substances in a small coffee bean are the main source of coffee flavour and can only be perceived through the human sense of smell. Hand brewed coffee has many different brewing parameters and techniques, but even if the parameters are replicated, different people will have different flavour profiles.

So sometimes, if you want to drink your favourite hand brewed coffee, you may want to make it yourself to get the cup of coffee to your liking faster, after all, not everyone brews coffee to their liking.

This is the fun part of hand brewing coffee. It is also the reason why many coffee lovers are fascinated by “hand brewed coffee”.

How many types of filter paper are available for hand-brewed coffee?

The filter paper is the filter medium for hand-brewed coffee and is often the most overlooked detail.

There are different grades of filter paper, and poor quality filters will leach the taste of the pulp into the coffee. There is a wide range of filter papers on the market today, with materials such as hemp, bamboo, cotton and high grade Japanese washi paper, etc. The length of the fibres in the filter paper also affects the flavour, and some thicker filter papers can also modify the flavour of the coffee. For example, Chemex filter paper from the USA is thick enough to filter out most impurities and may taste better than other filter papers.

Bleached filter paper vs unbleached filter paper:

Coffee filters are mostly made from wood, which is mostly brown in colour after steaming and has to undergo several stages of bleaching before it becomes white.

The difference between bleached and unbleached coffee filters is as follows.

1, bleached: refers to the coffee filter paper has been bleached, the filter paper looks whiter.

2, unbleached: refers to coffee filter paper has not been bleached, the filter paper looks close to light brown

Raw wood coloured filter paper, compared to white filter paper, less bleaching process, but the filter paper itself paper taste increased, need to pay attention to fully wet the filter paper with boiling water when brewing coffee, some at least 2 – 3 times wetting, in order to reduce the taste of paper into the coffee

Bleached filter paper has strict requirements in terms of material selection, process and quality control, mainly nowadays bleaching is done with enzymes, which are biologically active enzymes and are widely used in the pharmaceutical field, the degree of harm is negligible.

The choice of the right filter paper can be made by considering the following four factors.

Stiffness: filter paper gets wet when filtering. For long filtration procedures, a tougher filter paper with wet water should be considered.

Filtration efficiency: The sparseness and size of the small permeable holes in the filter paper affect its filtration efficiency. A high efficiency filter paper is both faster and has a higher resolution.

Capacity: The solid particles that accumulate during filtration may block the pores on the filter paper, so the more densely packed the pores are, the higher the capacity and the more filtered text it allows.

Applicability: Some filter papers are made using special manufacturing procedures, for example in pharmaceutical testing for the determination of nitrogen in blood, nitrogen-free filter papers must be used.

Note that the filter paper should not be filtered with zinc chloride, otherwise the paper will be corroded and damaged by the zinc chloride.

What is the difference between coffee filter paper #2 and #4?

The correct term for the size of coffee filter paper models should be 101, 102, 103, 104

101 is for 1 to 2 people

102 is for 2 to 4 people

103 is for 4-6 people

104 is for 7-12 people

This means that the larger the model, the larger the filter capacity and the more coffee you can make at once.

Of course, the size of the filter cup you want to buy depends on the size of the filter.

How do you use the fan and V-shape?

I. First of all, when using filter paper to brew coffee, you need to do some basic preparations: 1. prepare the ground coffee powder; 2. fold the bottom of the filter paper upwards and then fold the sides of the filter paper outwards. When placing the filter paper in the cup, press it gently with your fingertips to make it fit perfectly on the cup, without any seams. Then add the coffee powder and smooth out the surface.

II. For the first time, bring the boiling water to the right temperature (82-83 degrees) and then pour it evenly over the coffee powder in a special kettle (if you don’t have one, you can use a black tea kettle instead), never letting air into the hot water at this point, because once it is mixed with air, there is no way to fully infuse the coffee into the hot water. The measure is to maintain a certain flow of water when pouring, and the way you pour the hot water should be from the centre to the periphery, roughly in a (spiral) pattern, until the whole of the coffee powder is soaked in the hot water. (Note: about the level of a few drops falling onto the coffee pot)

III. The first time you pour the hot water, the surface will swell up like a burger, maintain this state for 20-30 seconds (about the time when the hot water is almost gone), then pour the hot water a second time. This is poured on the outermost edge of the coffee filter paper, and do not let the coffee powder on the edge of the filter paper rise up.

IV. Pour hot boiling water for the third time, then pour hot boiling water for the third time before the second pour is almost gone, and repeat in the same way until the desired amount is reached, and remove the cup before it is all gone. If you want to heat it up, do not boil it until it comes to a boil.
